Derek's New Hair Cut

Derek has not been satisfied having his hair cut in Grenada. So, we decided to bring back clippers so that I could cut his hair. Today was the 1st time for me to try it. How did I do?

2nd Wedding Anniversary

In July Derek and I celebrated our 2nd wedding anniversary. To celebrate we went to dinner at the fabulous LaLuna Hotel, Resort, and Spa! The property was so wonderful...secluded, quite, and beautiful! Unfortunately, it is too expensive for us to stay there but we did enjoy a lovely dinner.

Southern Cooking

Since we have been back in Grenada I have been doing a lot of cooking. We have just finished 3rd term and it was not a very demanding term so I have had extra time. Andy, a friend of ours from Chicago, told me how much he likes biscuits and gravy but he had only had it once. I was amazed at this, I could not imagine only have biscuits and gravy once in my life! So, I decided to fix him some. It was actually my first time making it and it turned out very well!

After, seeing how easy regular biscuits and gravy were to fix I decided to try my hand at chocolate gravy...especially considering Derek had never had them. It was rather easy and turned out good too! Derek liked it also!

4th of July in Grenada

This year was our second 4th of July in Grenada! This year we were able to enjoy the 4th, unlike last year we were working on our final project for our MPH. We spent the day at our friends' apartment on campus. Overall we had a great day celebrating America's Birthday in a foreign country! Here are a few pictures from the day...

The guys put up three flags out on their balcony! Their balcony is directly across from the university entrance so everyone coming on campus was greeted with American flags!

Bret with the flags...he was one of the main organizers for the party. He was so excited for the 4th of July you would have thought it was Christmas morning!

Bret even made a game for the day...you had to guess his 3 favorite Presidents! If you can't see them they were Regan and the 2 Bushs!

What party would be complete without food? Well we had hamburgers on the grill, bratwursts, and I made some of mom's famous baked beans! As you can see in the picture the guys used a rather unusual method to light the charcoal, they did not have any lighter fluid so they just used the burners of the stove top. I would not recommend this...not too smart or clean!

I also made a rather festive cake for us to have that weekend!Overall, we have a very fun 4th of July in Grenada!

Our Summer Break at Home

We made it back to Grenada safe and sound after our 6 week break at home! Our trip back to Grenada was not exactly easy...we had to stay overnight in Miami. But, we finally made it to Grenada early the next morning.

Our time at home was wonderful and relaxing! We were able to rewind from the previous semester and get prepared for the semester to come...considering this will be our longest stay in Grenada, 6 months.

Combined Birthday Dinner
The day after we got home from Grenada Derek's Mom, Linda, threw us a combined birthday dinner at their house. She decided to have it combined because both of our birthdays were while we were in Grenada, mine in February and Derek's in May. This birthday dinner was awesome! It was very nice for Derek and me to get to spend our first real meal back home with family and great food!



Destin, Florida
During our time at home my Mom and Dad took off work for a week and we all went to Destin, FL. We had a great time there. We did a lot of relaxing!

Lane Kiffin Women's Football Clinic
Mom and I had a great opportunity to go the Lane Kiffin Women's Football Clinic. We spent the day at the football complex and stadium. We had so much meeting the new coaching staff, seeing the facilities, and learning more about football! It was so comforting for me to be back in Knoxville and on campus!

We went to Luke & Allison's wedding. They were married at our church in Livingston. They had a beautiful ceremony and a fun reception that followed at Luke's parent's house.

We also went to DJ and Kelley's wedding. They were married at a great location in Townsend, TN. It was so pretty, the ceremony took place in front of a pond with the Great Smoky Mountains as the back drop!
